A lyophilizer performs a water removal process that preserves perishable materials, extends shelf life, and facilitates transport. This process begins by freezing the material, then reducing the pressure and adding heat to enable the frozen water to sublimate. Specifically, this three-stage process includes a freezing phase, a primary drying phase (sublimation), and a secondary drying phase (adsorption). When executed correctly, freeze-drying preserves products at high quality due to the low temperatures used. Primary applications include biological preservation, biomedical preservation, and food processing.

The main components of any freeze dryer are a refrigeration system, a vacuum system, a control system, a product chamber or manifold, and a condenser. Control systems vary in complexity; they typically include settings for temperature and vacuum pressure sensitivity.
